A Diamond is not just a romantic symbol but also a sacred one. A sacred symbol representing one of the oldest sacraments.  Traditionally, the image of the purified soul was seen as complete when it was able to reflect Divine light perfectly. The soul is purified when one has given their heart to the Lord completely.  The main symbol for this selfless act of sacrifice has been the CROSS.  And so, we made a diamond with the cross that reflects light.  A perfect image of this act of giving your heart to someone.
